Whip up these fluffy banana, date, and walnut muffins using plant-based Becel® for a healthier twist on a classic treat.
Ingredients:
  • 2 cups whole wheat flour
  • 0.75 cup white sugar
  • 0.5 cup old-fashioned oats
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 1.25 cups ripe, mashed bananas (about 3 bananas)
  • 2 large eggs
  • 0.75 cup plain low-fat yogurt
  • cup Becel® Salted Plant-Based Bricks, melted
  • 0.33333334326744 cup coarsely chopped walnuts
  • 0.75 cup chopped, pitted dates
Instructions:
  • Preheat your oven to 375°F (190°C) and generously spray a 12-cup muffin pan with non-stick cooking spray.
  • In a large bowl, mix together flour, sugar, rolled oats, baking powder, baking soda, and cinnamon; set aside.
  • In a medium bowl, mix together eggs, yogurt, melted Becel® Plant-Based Bricks, vanilla, and bananas.
  • Fold the banana mixture into the flour until just combined, then gently mix in the walnuts and dates. Spread the batter evenly into the prepared pan.
  • Bake until muffins are golden and a toothpick comes out clean when inserted, about 20 minutes. Allow to cool on a wire rack for 10 minutes, then remove from pan and cool completely.
