Sticky date and banana pudding

Whip up a speedy microwave sticky date and banana pudding for instant dessert satisfaction.
Ingredients:
  • Melted butter, for greasing
  • 200g fresh dates, pitted, chopped
  • 125ml (1/2 cup) water
  • 2.50 gm bicarbonate of soda
  • 1 ripe large banana, peeled, mashed
  • 100g butter, at room temperature
  • 175g (3/4 cup) caster sugar
  • 2 eggs, at room temperature
  • 190g (1 1/4 cups) self-raising flour, sifted
  • 160ml (2/3 cup) thickened cream
  • 155g (3/4 cup, firmly packed) brown sugar
  • 75g butter, cubed
Instructions:
  • Grease a 7cm-deep, 20cm microwave-safe ring container with melted butter and line the base with non-stick baking paper.
  • In a microwave-safe bowl, combine dates and water. Microwave on High for 3-4 minutes until dates are soft and liquid is absorbed. Mash the dates with a fork, add bicarbonate of soda, and mix until frothy. Let it cool for 10 minutes, then stir in the banana.
  • For the caramel sauce, mix cream, sugar, and butter in a 1-liter (4-cup) microwave-safe bowl. Microwave on High for 3 minutes, stirring every minute until the sauce boils. Set aside.
  • In a medium bowl, use an electric mixer to combine the butter, sugar, and vanilla essence until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the banana mixture, followed by gently folding in the flour using a wooden spoon. Transfer the batter to a greased container and level the surface.
  • Elevate the container by placing a microwave-safe rack or upturned plate on the turntable, creating a 2cm height. Cook the pudding, uncovered, on Medium/500watts/50% for 12 minutes or until the surface appears cooked, with some stickiness in patches. Expect rapid rising in the initial minutes and an uneven surface.
  • After microwaving the pudding, generously drizzle 185ml (3/4 cup) of caramel sauce on top. Microwave on Medium/500watts/50% power for another 3 minutes. Let it rest for 5 minutes before flipping onto a serving plate.
  • Drizzle the remaining caramel sauce over warm pudding slices before serving.
