Sticky date and macadamia nut pudding

Elevate classic sticky date pudding with macadamia nuts and rich caramel sauce.
Ingredients:
  • 250g pitted dried dates, chopped
  • 2.50 gm bicarbonate of soda
  • 100g butter
  • 8.80 gm vanilla essence
  • 2 eggs, lightly beaten
  • 187.50 ml toasted macadamias, chopped
  • 300ml cream
  • 225.00 gm brown sugar
  • 60g butter
Instructions:
  • Preheat your oven to 180°C, then lightly grease and line an 18 x 28cm baking dish.
  • In a saucepan over medium-low heat, gently simmer dates and water for 8 minutes until dates absorb most of the water. Remove from heat and stir in bicarbonate of soda.
  • Using an electric mixer, combine butter, sugar, and vanilla until creamy. Mix in eggs. Stir in dates and blend thoroughly. Gently mix in flour and nuts. Transfer mixture into a baking dish. Bake for 25 to 30 minutes.
  • To make the caramel sauce, gently heat all the ingredients in a saucepan over medium heat, stirring consistently for 5 minutes until it comes to a boil. Lower the heat and let it simmer for an additional 5 minutes. Drizzle the warm sauce over sliced pudding before serving.
