Ingredients:
  • 180.00 gm dark brown sugar, firmly packed
  • 250.00 ml fresh dates or dried dates
  • 500.00 ml plain flour (see Notes)
  • 2.50 gm baking soda
  • 2 egg whites
  • 2.50 gm ground ginger
  • 0.63 gm ground cinnamon
  • 125.00 ml candied ginger, optional
Instructions:
  • Preheat the oven to 180C. Combine 3/4 cup of dates with brown sugar in a blender, adding 1-2 tablespoons of water if using dried dates.
  • Combine all remaining ingredients (excluding candied ginger and remaining dates) on medium speed.
  • Chop the remaining dates and candied ginger into small pieces and fold them into the mixture.
  • Scoop mixture onto baking trays lined with parchment paper and bake for 15-25 mins, or until lightly golden brown and slightly soft.
