Try this easy and delicious muffin recipe for a delightful snack!
Ingredients:
  • 250.00 ml chopped dried dates
  • 110.55 gm golden syrup
  • 125.00 gm boiling water
  • 1.25 gm bicarbonate of soda
  • 375.00 gm self-raising flour
  • 5.00 gm ground ginger
  • 115.00 gm walnuts, chopped
  • 257.50 gm milk
  • 115.00 gm vegetable oil
  • 1 egg, lightly beaten
  • Toffee dessert sauce, to serve
  • Double cream, to serve
Instructions:
  • 1. Preheat the oven to 190°C/170°C fan-forced and grease a 6-hole, 3/4 cup-capacity Texas muffin pan. 2. In a heatproof bowl, combine dates, golden syrup, and boiling water. Let it sit for 5 minutes, then stir in the bicarbonate of soda.
  • In a bowl, mix flour, ginger, and walnuts. Create a well in the center and add the date mixture, milk, oil, and egg. Stir with a wooden spoon until just combined. Spoon the batter into the prepared pan.
  • Bake until golden brown and fully cooked, about 25-30 minutes. Let it rest in the pans for 5 minutes before transferring to a wire rack to cool. Enjoy warm with sauce and cream.
