Delicious date muffins perfect for any occasion - from lunch to dessert!
Ingredients:
  • 375.00 ml pitted dates
  • 2.50 gm bicarbonate of soda
  • 175g unsalted butter
  • 225g self-raising flour
  • 165g caster sugar
  • 4.40 gm vanilla extract
  • 2 eggs, lightly beaten
  • 150g brown sugar
  • 53.60 gm golden syrup
  • 250ml thickened cream
Instructions:
  • Preheat your oven to 180°C and generously grease a 12-hole muffin pan.
  • In a saucepan, combine dates with 1 cup (250ml) water and bring to a boil. Add bicarbonate of soda and 60g of butter. Stir until dissolved, then set aside to cool slightly.
  • Sift flour and caster sugar into a large bowl, then mix in vanilla extract and eggs. Process date mixture until it forms a rough paste. Stir into the bowl until just combined. Pour mixture into muffin holes and bake for 20 minutes. Meanwhile, melt remaining butter, brown sugar, golden syrup, and cream in a saucepan over low heat. Simmer for 10 minutes until thickened, then let cool. Serve warm muffins with toffee sauce and extra cream.
