Indulgent sticky pudding made with dried fruit and chocolate - a sweet treat to satisfy your cravings!
Ingredients:
  • 100g dried dates, chopped
  • 100g dried figs, chopped
  • 2.50 gm bicarbonate of soda
  • 250ml water
  • 50g unsaturated margarine
  • 90.00 gm brown sugar
  • 2 eggs
  • 225.00 gm self-raising flour
  • 4.40 gm vanilla essence
  • 250.00 gm water
  • 40.00 gm caster sugar
  • 10.00 gm cocoa powder
  • 14.40 gm honey
  • Fresh figs, to serve
Instructions:
  • 1. Preheat the oven to 180°C. Lightly grease 6 1-cup muffin pans. Combine dried dates and figs in a bowl. Sprinkle bicarbonate of soda over the fruits. Pour boiling water over the mixture and let it sit for 10 minutes.
  • Cream together margarine, brown sugar, eggs, self-raising flour, and vanilla essence until thick. Gently mix in date mixture and divide the batter into pans. Bake for 25-30 minutes.
  • Combine water, caster sugar, cocoa powder, and honey in a saucepan over low heat, stirring until dissolved. Simmer for 20 minutes or until slightly thickened. Drizzle over puddings and fresh figs before serving.
