Chai-spiced date muffins with coffee glaze recipe

Elevate date muffins with chai spices and a coffee glaze for a delectable twist!
Ingredients:
  • 140g date
  • 300g self-raising flour
  • 165g brown sugar
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground cloves
  • 0.63 gm ground nutmeg
  • 1/4 tsp ground star anise
  • 1/4 tsp ground cardamom
  • 2 Free Range Eggs
  • 125g butter, melted
  • 125ml buttermilk
  • 1 tsp instant coffee powder
  • 20.00 gm boiling water, extra
  • 160g icing sugar mixture
  • 18.40 gm chopped walnuts
Instructions:
  • Preheat the oven to 180°C. Place paper cases in twelve 1/3-cup (80ml) muffin pans. In a bowl, mix the dates and water together, and let them soak for 5 minutes.
  • In a large bowl, mix together the flour, sugar, cinnamon, cloves, nutmeg, star anise, and cardamom. In a small bowl, whisk the eggs, butter, buttermilk, and dates. Combine the egg mixture with the flour mixture, stirring until just combined. Be careful not to overmix.
  • Distribute the mixture evenly into the prepared pans. Bake for 25 minutes or until a skewer inserted in the center comes out clean. Allow to cool on a wire rack.
  • Combine coffee powder and extra water in a bowl, stirring until coffee dissolves. Mix in the icing sugar to create a runny paste. Drizzle the mixture over muffins and garnish with walnuts.
