Healthy banana and date bran muffins - guilt-free breakfast bliss.
Ingredients:
  • 2.125 cups all-purpose flour
  • 2 tablespoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup sugar
  • 0.5 cup reduced-calorie margarine
  • 1 egg
  • 3 medium ripe bananas, mashed
  • 1.5 teaspoons vanilla extract
  • 0.75 cup bran flakes cereal
  • 12 dates, pitted and chopped
Instructions:
  • Preheat the oven to 400°F (200°C), then generously grease a muffin pan with non-stick spray or line with paper muffin liners. Next, sift together the flour, baking powder, cinnamon, and salt and set aside.
  • Using an electric mixer, whip up a light and fluffy mixture by creaming together sugar, margarine, and egg in a medium bowl. Add bananas, vanilla, cereal, and dates. Gently fold in dry ingredients until just mixed. Fill prepared muffin cups about 2/3 full with the batter.
  • Bake in the preheated oven for 20 to 25 minutes until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan on a wire rack for at least 10 minutes before removing.
