Vintage Christmas cake recipe passed down for generations, improves with age.
Ingredients:
  • 1 cup dates, pitted and chopped
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1 cup white sugar
  • 2.5 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon butter
  • 1 cup buttermilk
  • 4 tablespoons all-purpose flour
Instructions:
  • Preheat the oven to 350 degrees F (175 C) and prepare two 8-inch round cake pans by greasing and flouring them. In a bowl, combine dates and soda, then pour boiling water over the mixture. Let it sit aside.
  • Combine 1 cup sugar, 2 1/2 cups flour, and 1 cup chopped walnuts in a large mixing bowl. Add egg, 1 teaspoon vanilla, a pinch of salt, and a tablespoon of butter; mix well. Gently fold in chopped dates with liquid until fully incorporated. Pour batter into prepared pans.
  • Bake the cake for 25-30 minutes until the edges pull away from the pans and turn golden brown.
  • Combine buttermilk, sugar, salt, and flour in a medium saucepan. Cook over medium heat until thickened. Stir in vanilla and the additional cup of walnuts.
  • Spread the mixture generously between layers and on top of the cake, allowing the filling to gracefully cascade down the sides.
