Moist and flavorful date cake, ideal with coffee or as a light dessert.
Ingredients:
  • 1 (8 ounce) package dried pitted dates, diced
  • 2 teaspoons baking soda, divided
  • 0.33333334326744 cup boiling water
  • 3 cups whole wheat flour
  • 2 teaspoons instant coffee
  • 2 teaspoons milk powder
  • 2 tablespoons boiling water
  • 1.75 cups white sugar
  • 1 cup margarine
  • 1.5 tablespoons margarine
Instructions:
  • Start by preheating the oven to a toasty 350 degrees F (175 degrees C), and then give that 9x13-inch baking pan a nice greasing.
  • In a bowl, combine dates with 1 teaspoon of baking soda, mix thoroughly. Pour in 1/3 cup boiling water, stir, and let dates swell for about 10 minutes. Squeeze out excess liquid with your hands.
  • In a bowl, whisk together flour and 1 teaspoon of baking soda. In another bowl, blend instant coffee, milk powder, and 2 tablespoons of boiling water until fully dissolved.
  • In a large bowl, use an electric mixer to blend sugar, margarine, and eggs until smooth. Add coffee mixture and dates; mix until well combined. Gradually fold in the flour. Transfer the batter to the prepared baking pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 35 to 40 minutes.
