Indulge in a rich, moist coffee date bread - perfect for holiday feasts and delightful breakfasts.
Ingredients:
  • 1 cup chopped pitted dates
  • 1 teaspoon baking soda
  • 1 cup strong brewed coffee
  • 2 tablespoons butter, softened
  • 1 cup white sugar
  • 1.5 cups all-purpose flour
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then grease an 8x4-inch loaf pan and line the bottom with parchment paper for easy removal later.
  • In a small bowl, combine dates and baking soda. Heat coffee until boiling, then pour it over the dates mixture. Let it sit for a while.
  • Combine butter, sugar, and egg in a medium bowl until smooth. Mix in vanilla, then add flour and salt. Gently fold in pecans and dates. Pour batter into the prepared loaf pan.
  • Bake for 1 hour in the preheated oven until the top of the loaf springs back when lightly touched. Allow to cool for 5 minutes in the pan before removing. Peel off parchment paper and cool completely on a wire rack.
