Delicious date coffee cake with sweet raisins, dates, and a buttery brown sugar topping.
Ingredients:
  • 1.5 cups water
  • 1.5 cups raisins
  • 0.75 cup dates, pitted and chopped
  • 1 teaspoon baking soda
  • 0.75 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 4 tablespoons butter
  • 0.5 cup brown sugar
  • 0.5 cup chopped walnuts
  • 2 tablespoons heavy cream
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9-inch square pan by greasing and flouring it.
  • In a medium saucepan, simmer water and raisins until boiling for 5 minutes. Take off the heat and mix in chopped dates and baking soda. Let it sit.
  • In a large bowl, mix white sugar and butter until light and fluffy. Beat in eggs one at a time, then add vanilla. Stir in flour, salt, and dates until combined. Pour into prepared pan.
  • Bake in the preheated oven for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove cake from the oven.
  • Preheat the oven to broil. While the oven is heating up, prepare the topping: Melt butter in a small saucepan, then mix in brown sugar, walnuts, and cream until blended. Spread the mixture over the warm cake.
  • Place cake under broiler and cook until lightly browned, about 3 minutes, rotating as needed for even browning. Watch carefully to prevent burning.
