Sticky date cake

Decadent cake with toffee sauce, reminiscent of sticky date pudding.
Ingredients:
  • Melted butter, to grease
  • 150g pitted dried dates, coarsely chopped
  • 60ml (1/4 cup) boiling water
  • 1 x 340g pkt golden butter cake mix
  • 1.25 gm mixed spice
  • 60g butter, at room temperature
  • 125ml (1/2 cup) milk
  • 300g toffee dessert sauce
  • Double cream, to serve
Instructions:
  • Preheat oven to 180°C. Grease a 20cm round cake pan with melted butter, then line with non-stick baking paper.
  • In a microwave-safe bowl, place the dates and cover with boiling water. Stir well and microwave on High for 30 seconds. Mash the dates with a fork until smooth, then let it cool for 10 minutes.
  • In a bowl, mix the cake mix and mixed spice. Follow the directions on the packet to make the cake with butter, eggs, and milk. Add the date mixture and stir. Pour the batter into the prepared pan and bake for 40 minutes until a skewer comes out clean. Let it cool for 5 minutes before serving.
  • Warm the sauce as instructed on the packet. Slice the cake into wedges and garnish with a dollop of double cream and sauce before serving.
