Enjoy a luxurious fruit cake drizzled with caramel.
Ingredients:
  • 250g pitted dates, chopped
  • 2.50 gm bicarbonate of soda
  • 375.00 gm boiling water
  • 125g butter, softened
  • 135.00 gm brown sugar
  • 2 eggs, at room temperature
  • 300.00 gm self-raising flour, sifted
  • 180.00 gm brown sugar
  • 300ml thickened cream
  • 2.20 gm vanilla extract
  • 60g butter, chopped
Instructions:
  • Preheat the oven to 180°C. Grease a 7cm deep, 22cm cake pan, and line the base with baking paper.
  • Combine dates and bicarbonate of soda in a heatproof bowl. Cover with boiling water and let it sit for 20 minutes until dates are tender.
  • Cream together butter, sugar, and vanilla using an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Gently fold in the date mixture and flour using a large metal spoon until fully combined.
  • Transfer the mixture into a cake pan. Bake for 40-45 minutes or until a skewer inserted in the center comes out clean. Allow it to cool for 10 minutes before flipping it onto a wire rack.
  • Prepare the caramel sauce by mixing sugar, cream, vanilla, and butter in a saucepan over medium heat until boiling, stirring for 3 minutes. Reduce heat to low and simmer for 2 minutes. Drizzle the warm sauce over the cake and slice into wedges before serving.
