Delicious eggless date loaf cake perfect for pairing with tea or vanilla ice cream.
Ingredients:
  • 0.75 cup milk
  • 18 dates, pitted and left whole
  • 0.5 cup brown sugar
  • 0.5 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 cup chopped walnuts
Instructions:
  • In a saucepan, gently heat the milk until it's almost boiling. Add the dates and allow them to soak for several hours in the refrigerator. For optimal flavor, refrigerate the dates and milk overnight.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a medium loaf pan.
  • Combine the milk and dates in a food processor, then blend until smooth. Add brown sugar and pulse until incorporated. Finally, mix in vegetable oil and vanilla extract with a few pulses.
  • Combine flour, baking soda, and cinnamon in a bowl and whisk until fully blended. Gradually pulse in flour mixture, about 1/4 cup at a time, into the date paste until the batter is smooth; be careful not to overmix. Gently fold in walnuts with a fork and transfer the batter to the prepared loaf pan.
  • Bake until a toothpick inserted in the center comes out clean, around 40 minutes in the preheated oven.
