Eggless chocolate gelato: creamy, decadent, and quick to make with 5 simple ingredients in an ice cream maker.
Ingredients:
  • 3 cups cold whole milk, divided
  • 0.25 cup white sugar
  • 3 tablespoons cornstarch
  • 7 ounces fine-quality bittersweet chocolate, finely chopped
Instructions:
  • In a medium saucepan over medium heat, gently bring 2 1/4 cups of cold milk to a near boil.
  • As milk heats up, blend sugar, 1/4 cup cold milk, cornstarch, and salt in a medium bowl until smooth. Then slowly whisk this mixture into the hot milk, and let it come to a boil over medium heat. Boil for 3 minutes while whisking continuously until the mixture thickens. Take off the heat.
  • Add the chocolate to a spacious bowl.
  • In a small saucepan over medium heat, gently heat the remaining 1/2 cup of cold milk until it just starts to boil. Pour the hot milk over the chocolate and allow it to sit for approximately 1 minute until the chocolate melts. Whisk the mixture until it's smooth.
  • Combine the chocolate mixture with the cornstarch-milk mixture and sieve into a mixing bowl. Stir occasionally to prevent a skin from forming. Cover with wax paper, chill in the refrigerator for at least 1 1/2 hours until cold.
  • Transfer the mixture into the gelato or ice cream maker and freeze for approximately 15 minutes following the manufacturer's guidelines. Once done, move the mixture to an airtight container and store in the freezer if not serving right away.
