Soft and moist eggless cookies made with instant pudding mix for unbeatable texture.
Ingredients:
  • 1 cup unsalted butter, softened
  • 0.75 cup brown sugar
  • 0.25 cup white sugar
  • 0.5 (5.1 ounce) package instant vanilla pudding mix
  • 1 teaspoon vanilla extract, or more to taste
  • 2 tablespoons milk
  • 1.5 tablespoons vinegar
  • 1.5 teaspoons baking powder
  • 2.25 cups all-purpose flour
  • 1 pinch salt
  • 1.5 cups semi-sweet chocolate chips
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and grease 2 cookie sheets.
  • In a large bowl, mix together butter, both sugars, pudding mix, and vanilla until smooth and creamy using an electric mixer.
  • Combine milk, vinegar, and baking powder in a small bowl and whisk until frothy.
  • Combine the milk-vinegar mixture with the butter mixture, then add flour, baking soda, and salt until a dough forms. Gently fold in the chocolate chips.
  • Use a cookie scoop to portion out uniform dough balls. Place them on the baking sheets, gently flatten for a thinner cookie, if desired.
  • Bake in the preheated oven for 8 to 10 minutes until golden brown. Let the cookies cool on the sheets briefly, then transfer them to a wire rack to cool completely.
