Eggless Peanut Butter Chocolate Muffins

Indulgent eggless PB chocolate chip muffins for a decadent morning treat.
Ingredients:
  • 1.5 cups white sugar
  • 1.3333333730698 cups oats
  • 0.66666668653488 cup unsweetened cocoa powder
  • 2 tablespoons baking powder
  • 2 cups milk
  • 0.5 cup chocolate chips, or to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and get those muffin cups ready by lining them with paper liners.
  • Combine flour, sugar, oats, cocoa powder, and baking powder; whisk in a bowl.
  • In a saucepan, gently stir together milk and peanut butter until smooth over medium-low heat for about 5 minutes. Take the saucepan off the heat and let the peanut butter mixture cool slightly for about 5 minutes. Combine the peanut butter mixture with the flour mixture until just combined, then fold in the chocolate chips. Fill the prepared muffin cups about 2/3 full with the batter.
  • Bake in the preheated oven for about 13 minutes or until a toothpick inserted in the center of a muffin comes out clean.
