Decadent eggless dessert reminiscent of sticky date pudding.
Ingredients:
  • 1 cup dates, pitted and chopped
  • 1 cup dark brown sugar
  • 0.25 cup margarine
  • 1 cup boiling water
  • 1.75 cups self-rising flour
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a 9x5 inch loaf pan by greasing and flouring it.
  • Combine dates, brown sugar, margarine, and boiling water in a large bowl. Allow mixture to sit for 15 minutes. Add flour, soda, and vanilla, then pour the batter into the prepared pan.
  • Bake in the oven until golden and fragrant, then cool to perfection.
