Banana date loaf

Delicious banana and date tea loaf perfect for any occasion.
Ingredients:
  • 300g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 2.50 gm ground nutmeg
  • 125g pitted dates, chopped
  • 115g caster sugar
  • 250ml milk
  • 260.00 gm mashed banana (about 2 large)
  • Butter, to serve (optional)
Instructions:
  • Preheat your oven to 180°C. Line a 24 x 13.5cm loaf pan with non-stick baking paper. In a large bowl, sift together the flour, bicarbonate of soda, and nutmeg. Add in the dates and sugar, then mix well.
  • In a separate bowl, mix together the milk, eggs, and banana. Fold this mixture into the date mixture until well combined. Pour into the pan and bake for 45-50 minutes, or until a skewer inserted into the center of the loaf comes out clean. Let it cool for 5 minutes, then transfer to a wire rack to cool completely. Slice and serve with butter, if desired.
