Delicious and easy-to-make homemade recipe.
Ingredients:
  • 100.00 gm freshly ground almond meal (store bought is also fine)
  • 35.00 gm coconut flour
  • 125.00 ml xylitol or coconut sugar (see Notes)
  • 40.00 ml protein powder, natural or vanilla
  • 4.00 gm baking powder
  • 0.83 gm bicarb of soda
  • 2.50 gm ground cinnamon
  • 1 tsp vanilla powder
  • 1.25 gm mixed spice
  • 2 small ripe banana
  • 187.50 ml dried pitted dates (fresh is also fine)
  • 2 free-range eggs
  • 105.00 gm coconut oil
  • 40.00 ml goji berries
  • 20.00 ml chia seeds
  • 57.20 gm honey, plus 57.20 gm extra
  • 20.00 gm ground almonds
  • 80.00 ml coconut shreds
  • 16.80 gm coconut oil
  • 57.20 gm honey
  • 1.25 gm ground cinnamon
  • 1/2 tsp vanilla powder
Instructions:
  • Heat your oven to 180C and prepare a cake tin by greasing it and lining it with baking paper.
  • Combine all dry ingredients in a large mixing bowl and whisk together to blend and aerate.
  • Place the wet ingredients into a high-quality blender and blend until creamy.
  • Gently combine the wet ingredients with the dry ingredients until fully incorporated.
  • Spread half of the batter in the cake tin, generously drizzle with 1 tablespoon of honey, and top with the remaining batter.
  • Combine all streusel ingredients in a separate bowl and generously sprinkle over the cake.
  • Bake until a skewer inserted comes out clean, about 40 minutes.
