Decadent banana and date cake topped with rich caramel sauce - perfect for dessert or tea time!
Ingredients:
  • Melted butter, to grease
  • 185ml (3/4 cup) boiling water
  • 180g (about 10) fresh dates, pitted, coarsely chopped
  • 2.50 gm bicarbonate of soda
  • 125g butter, at room temperature, cubed
  • 175g (3/4 cup) caster sugar
  • 2 eggs, at room temperature
  • 260g (1 cup) mashed very ripe banana
  • 42.00 gm fresh lemon juice
  • 300g (2 cups) plain flour
  • 10.00 gm baking powder
  • Double cream or vanilla ice-cream, to serve, optional
  • 400g (2 cups, firmly packed) brown sugar
  • 300ml thickened cream
  • 100g butter, cubed
  • 4.40 gm vanilla essence
Instructions:
  • Preheat the oven to 190°C. Grease a 20cm square cake pan with melted butter and line the base with non-stick baking paper.
  • In a medium bowl, mix boiling water, dates, and bicarbonate of soda until well combined. Allow it to cool briefly before using.
  • Cream together the butter and sugar in a mixing bowl using an electric beater until light and creamy. Gradually add eggs one at a time, ensuring each is well incorporated before adding the next.
  • Mash banana with lemon juice, add to creamy butter, and mix with a sturdy metal spoon until smooth. In a separate bowl, sift flour and baking powder together. Gently fold half of the flour mixture into the butter mixture. Add in the dates, then fold in the rest of the flour mixture.
  • Transfer the mixture into the greased cake pan and spread it evenly using the back of a spoon. Bake in a preheated oven for 50-60 minutes, or until a skewer inserted into the center comes out clean. Allow it to rest for 10 minutes after removing it from the oven.
  • In a saucepan over low heat, mix together sugar, cream, butter, and vanilla essence until butter melts and mixture is smooth. Bring to a boil, then simmer for 5 minutes.
  • Cut the cake into slices and arrange in serving bowls. Drizzle with warm sauce and enjoy immediately with a dollop of cream or ice cream on the side. Optionally, let the cake cool completely on a wire rack.
