Banana and date loaf - a delicious, crowd-pleasing tea-time treat!
Ingredients:
  • Vegetable oil, to grease
  • 300g fresh dates, pitted, coarsely chopped
  • 185ml (3/4 cup) water
  • 150g butter, chopped
  • 450g (3 cups) self-raising flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 3 medium (about 300g) overripe bananas, mashed
  • 3 eggs, lightly whisked
  • 6.60 gm vanilla extract
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 180°C. Lightly grease twelve 160ml (2/3-cup) non-stick mini loaf pans with oil. In a medium saucepan, combine dates, water, and butter. Bring to a boil over medium heat, then remove from heat and stir until butter melts. Let it cool slightly for 5 minutes.
  • In a large bowl, mix together the flour and sugar. Create a well in the center and gently incorporate the date mixture, banana, egg, and vanilla until just combined.
  • Divide the batter evenly into the prepared pans. Bake in the preheated oven for about 25 minutes until golden brown and a skewer inserted in the centers comes out clean. Let cool in the pans for 2-3 minutes, then transfer to a wire rack to cool completely.
  • Present the banana & date loaves on a platter. Sprinkle with icing sugar and enjoy promptly.
