Indulge in a comforting banana and date custard dessert, perfect for the winter season!
Ingredients:
  • 1 x 375g can light evaporated milk
  • 2 egg yolks (from 59g eggs), lightly whisked
  • 4.40 gm vanilla essence
  • 4 fresh dates, pitted, chopped
  • 1 small ripe banana, sliced
  • 13.60 gm maple syrup
  • 1 small ripe banana, extra, sliced, for serving
Instructions:
  • Preheat your oven to 180°C.
  • In a small saucepan, gently mix the evaporated milk, egg yolks, and vanilla essence. Warm over low heat, stirring continuously, until the mixture thickens and coats the back of a spoon, for about 15 minutes.
  • Split the dates and banana evenly among four 125mls (1/2-cup) ramekins. Drizzle the fruit with half of the maple syrup and top with custard.
  • Place the ramekins in a baking dish and add warm water halfway up the sides. Bake in a preheated oven until set and firm to the touch, about 20 minutes.
  • After removing from the water bath, choose to enjoy warm or refrigerate until chilled. When ready to serve, garnish each custard with the extra banana slices and drizzle with the remaining maple syrup.
