Whip up a vibrant mixed green salad in just 15 minutes using simple pantry staples.
Ingredients:
  • 6 cups mixed field greens (about 5 oz)
  • 6 tablespoons olive or vegetable oil
  • 1/2 cup walnut halves
  • 3 tablespoons red wine vinegar
Instructions:
  • Distribute field greens evenly into 4 salad bowls.
  • In a medium microwave-safe bowl, drizzle 1 tablespoon of oil over the walnut halves. Toss well to coat. Microwave uncovered on High for 2 minutes 30 seconds to 3 minutes, stirring every 30 seconds, until the walnuts are fragrant.
  • Whisk in the remaining 5 tablespoons of oil and the vinegar. Microwave on High, uncovered, for about 30 seconds until the dressing is warm but not boiling. Season with salt and mix well. Drizzle over salads and serve right away.
