Grilled chicken skewers marinated in tangy coleslaw dressing, served with pita bread and crisp cabbage slaw.
Ingredients:
  • 1 cup Marie's® Original Coleslaw dressing
  • 1 teaspoon paprika
  • 0.5 teaspoon cumin
  • 0.125 teaspoon cinnamon
  • 3 cloves garlic, minced
  • 0.5 teaspoon red pepper flakes
  • Zest and juice of 1 lemon
  • 4 boneless chicken breasts, cut in large bite-sized pieces
  • 1 large onion, chopped in large pieces
  • 8 wooden skewers, soaked in water
  • 0.5 head green cabbage, shredded
  • 0.5 red onion, thinly sliced
  • 1 small bunch flat-leaf parsley, chopped
  • 0.5 cup Marie's® Original Coleslaw dressing
  • 6 pieces pita bread
  • 2 medium tomatoes, sliced
  • Marie's® Original Coleslaw dressing, for drizzling
Instructions:
  • Prepare a flavorful marinade by combining Marie's Original Coleslaw dressing, paprika, cumin, cinnamon, garlic, red pepper flakes, lemon zest, lemon juice, salt, and pepper in a mixing bowl.
  • Thread chicken and onion onto skewers, placing them in a dish. Drizzle marinade over skewers, ensuring they are coated. Chill for at least 1 hour or overnight.
  • Make the slaw: Combine cabbage, onion, parsley, and Marie's Original Coleslaw dressing in a large bowl. Add red pepper flakes for a spicy kick, if desired.
  • Preheat the grill to medium-high heat and lightly oil the grates. Grill the marinated chicken skewers, turning occasionally, until fully cooked, for about 15 minutes. Serve immediately on a platter with warm pita bread, slaw, sliced tomatoes, and extra Marie's Original Coleslaw dressing for drizzling.
