Tangy Mediterranean chicken kebabs marinated in lemon juice, onion juice, olive oil, yogurt, garlic, and saffron.
Ingredients:
  • 3 pounds boneless, skinless chicken breasts, cut into large cubes
  • 1 cup plain yogurt
  • 1 cup lemon juice
  • 1 cup onion juice
  • 1 cup olive oil
  • 0.5 teaspoon chopped garlic
  • 0.5 teaspoon saffron
  • 8 skewers, or as needed
Instructions:
  • In a large bowl, combine yogurt, lemon juice, onion juice, olive oil, garlic, black pepper, and saffron. Add chicken pieces to the marinade, coat well, cover with plastic wrap, and refrigerate for 8 hours to overnight.
  • Prepare your outdoor grill by preheating it to medium-high heat and lightly oil the grate.
  • Skewer marinated chicken; discard any leftover marinade.
  • Grill the meat on high heat, flipping regularly, until beautifully golden on all sides and perfectly cooked through, approximately 8 minutes per side.
