Mediterranean marinated baked chicken for two - zesty lemon, garlic, and herbs.
Ingredients:
  • 2 (8 ounce) skinless, boneless chicken breasts
  • salt and freshly ground black pepper
  • 0.25 cup olive oil
  • 0.25 cup freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 0.5 teaspoon dried oregano, or more to taste
  • 0.25 teaspoon dried thyme, or more to taste
Instructions:
  • Season chicken breasts generously with a pinch of salt and pepper, ensuring all sides are coated, then transfer them to a bowl or lidded container. In a small bowl, mix together olive oil, lemon juice, garlic, oregano, and thyme to create a flavorful marinade. Pour the marinade over the chicken breasts, making sure they are fully covered, and let them marinate at room temperature for 10 minutes.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and position one oven rack 6 inches below the heat source.
  • Arrange the chicken breasts in a baking dish and generously coat them with the flavorful marinade.
  • Bake the chicken in the preheated oven on the middle rack until fully cooked and the juices run clear, for 35 to 45 minutes depending on thickness. Transfer the baking dish to the top rack and broil the chicken until nicely browned, about 5 minutes.
