Mediterranean-inspired braised chicken with sun-dried tomatoes, olives, and fragrant spices, baked to tender perfection. Pair with crusty bread for a delightful meal.
Ingredients:
  • 270g jar sun-dried tomatoes in oil
  • 1kg chicken thigh
  • 1 large red onion, cut into wedges
  • 375ml of chicken stock
  • 120g (3/4 cup) pitted kalamata olives, drained
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • In a large flameproof casserole dish, heat 1 tablespoon of the sun-dried tomato oil over medium-high heat. Sear the chicken for 5 minutes on each side, or until golden brown. Then, transfer the chicken to a plate.
  • Cook the onion in the dish until golden and starting to soften for about 5 minutes. Return the chicken to the dish, add stock, season with pepper, and bring to a boil. Carefully transfer the dish to the oven and bake for 30 minutes.
  • Separate tomatoes from the oil they were in. Scatter tomatoes and olives around the chicken. Bake for an additional 30 minutes or until the chicken is golden brown and fully cooked. Enjoy with crusty bread.
