Gnocchi with broccoli and lemon

Delicious lemon gnocchi topped with freshly grated parmesan.
Ingredients:
  • 500g packet fresh gnocchi
  • 60g butter
  • 1 medium head broccoli, cut into small florets
  • Juice of 1/2 lemon, plus extra wedges to serve
  • 125.00 ml grated parmesan (or vegetarian hard cheese)
Instructions:
  • Cook the gnocchi in a pot of boiling water until they rise to the surface. Remove them and place them in a bowl of ice water to cool down.
  • In a large frying pan over high heat, melt half of the butter. Add the gnocchi and cook, stirring occasionally, for 3-4 minutes. Lower the heat to medium.
  • In a pan, melt the remaining butter and toss in the broccoli. Stir and cook for 4-5 minutes.
  • Drizzle with lemon juice and sprinkle half the parmesan, season to taste. Garnish with remaining parmesan, a lemon wedge on the side, and optional chopped parsley.
