Dinner is served: Pillowy gnocchi paired with fresh broccoli and cauliflower in a zesty lemon cream sauce. Perfect for a speedy weeknight meal!
Ingredients:
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 cups fresh broccoli florets
  • 3 cups coarsely chopped cauliflower
  • 1 teaspoon lemon-pepper seasoning
  • 1 cup chicken broth
  • 1 (12 ounce) package frozen gnocchi
  • 0.25 cup lemon juice
  • 1 pint heavy cream
  • 1 tablespoon capers
  • 0.5 cup finely grated Parmigiano-Reggiano
Instructions:
  • In a large high-sided pan with a lid, warm oil over medium heat. Sauté garlic until fragrant, around 1 minute. Stir in broccoli, cauliflower, and lemon-pepper seasoning. Cover and cook for 4 minutes. Uncover, pour in chicken broth, cover, and steam cook for another 4 minutes.
  • While you wait, prepare a large pot of lightly salted boiling water. Cook gnocchi until they float to the top, which should take 3 to 5 minutes. Drain the gnocchi and save 1/2 cup of cooking water to add to the sauce later.
  • Drizzle vegetables with fresh lemon juice, then gently mix. Add rich cream and tangy capers. Simmer for 6 minutes, then gently fold in gnocchi and pasta water. Season generously with salt and pepper. Sprinkle with grated Parmesan and allow to rest for 2 minutes before enjoying.
