Delightful zucchini and gnocchi in a flavorful garlic-Parmesan sauce, ready in just 20 minutes for a simple and fast weeknight meal.
Ingredients:
  • 1 pound gnocchi
  • 2 tablespoons salted butter
  • 1 tablespoon olive oil
  • 2 zucchini, sliced
  • 2 teaspoons chopped garlic
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Boil a generously salted large pot of water. Cook gnocchi in boiling water until they rise to the surface, 2 to 4 minutes. Drain, saving 1/4 cup of cooking liquid.
  • In a saucepan over medium heat, combine butter and olive oil. Saute zucchini and garlic until tender, about 5 to 7 minutes. Add cooked gnocchi, Parmesan cheese, and cooking liquid. Stir until creamy.
