Quick and flavorful ratatouille tray bake with gnocchi, ready in 30 minutes.
Ingredients:
  • 500g pkt Potato Gnocchi
  • 400g Perino tomatoes
  • 2 small zucchini, chopped
  • 1 red onion, cut into wedges
  • 36.40 gm extra virgin olive oil
  • 1 tsp dried Italian herbs
  • 1/2 tsp dried chilli flakes (optional)
  • Shaved parmesan, to serve
  • Basil leaves, to serve
Instructions:
  • Preheat the oven to 200°C. Line a large roasting pan with baking paper, then mix together the gnocchi, tomatoes, zucchini, and onion in the pan.
  • In a small bowl, mix the oil and garlic together. Pour the oil mixture over the gnocchi in the pan, ensuring even coverage. Sprinkle with herbs and chili flakes (if desired), season, then gently mix to combine and spread evenly in the pan.
  • While baking, gently fold the gnocchi mixture once halfway through cooking for 20 minutes or until vegetables are golden and tender. Serve the dish by sprinkling parmesan and basil over the top.
