Effortlessly delicious garlic butter poached chicken with gnocchi in creamy sauce, topped with gooey cheese. Perfect comforting dinner with minimal clean-up.
Ingredients:
  • 2 small chicken breast fillets (about 500g), trimmed
  • 60g butter, melted
  • 3 garlic cloves, crushed
  • 500g pkt potato gnocchi
  • 2 tsp Chicken Stock Powder
  • 250ml (1 cup) boiling water
  • 300ml cooking cream, heated
  • 60g baby spinach
  • 120g (1 1/2 cups) grated 4 cheese blend
  • 20.00 ml chopped fresh flat-leaf parsley
Instructions:
  • Preheat your oven to 200C/180C fan forced. Take a large ovenproof dish and place the chicken inside. In a small bowl, mix the butter and garlic together. Drizzle 2 tbsp of the butter mixture over the chicken and make sure to coat it evenly. Cover the dish with foil and bake for 30 minutes, turning the chicken halfway through until it's fully cooked. Once done, remove the dish from the oven, uncover it, and set the foil aside for later use.
  • Shred the chicken using 2 forks into bite-sized pieces. Add gnocchi to the chicken. Dissolve stock powder in boiling water, then mix in hot cream. Stir to combine and coat gnocchi. Cover dish with foil and bake for 15 minutes.
  • Stir in the spinach until wilted, then sprinkle with cheese. Bake uncovered for 10 minutes until the cheese is melted and lightly golden. Heat the butter mixture in the microwave until hot, brush over the surface, and sprinkle with parsley before serving.
