Spinach and three cheese stuffed chicken breast baked in creamy cheese sauce.
Ingredients:
  • 4 chicken breast fillets
  • 18.20 gm olive oil
  • 125g cream cheese
  • 125ml (½ cup) cream for cooking
  • 100g (1 cup) shredded mozzarella
  • Fresh continental parsley, to serve
  • 9.20 gm olive oil
  • 2 garlic cloves, finely chopped
  • 120g pkt baby spinach leaves
  • 75g cream cheese
  • 50g (1/2 cup) shredded mozzarella
  • 20g (1/4 cup) finely shredded parmesan
  • 1 tsp finely grated lemon rind
Instructions:
  • Prepare the filling by heating oil in a small frying pan over medium heat. Sauté garlic for 1 minute until fragrant. Add spinach and cook for 3 minutes until wilted. Let it cool, then chop it and place in a bowl. Mix in cream cheese, mozzarella, parmesan, lemon rind, and season generously. Combine well and set aside.
  • Carefully slice each chicken breast horizontally to create a pocket without cutting all the way through. Fill each pocket with the desired filling and seal shut using toothpicks.
  • - Preheat the oven to 180C/160C fan forced. - Heat oil in a large non-stick frying pan. - Sear chicken for 3 minutes on one side until golden, then flip and cook for 3 more minutes. - Transfer chicken to a baking dish. - Add cream cheese and cream to the pan, stir until smooth, then pour around the chicken. - Sprinkle with mozzarella. - Bake for 25 minutes until chicken is cooked through and cheese is golden. - Rest for 5 minutes before serving.
  • Slice the stuffed chicken breasts generously and present them with a luscious drizzle of the cheesy sauce and a sprinkle of parsley.
