Creamy tahini salmon tray bake recipe

Creamy salmon dish cooked in one pot for a quick and healthy weeknight dinner, ready in just 20 minutes.
Ingredients:
  • 150g (1/2 cup) tahini
  • 80ml (1/3 cup) lemon juice
  • 2 garlic cloves
  • 4 Salmon Skin off Fillets
  • 1 bunch broccolini, halved lengthways, ends trimmed
  • Ground sumac (see note), to sprinkle
  • 1/2 small red onion, thinly sliced
  • 62.50 ml fresh coriander sprigs
  • Lemon wedges, to serve
  • Toasted Turkish bread, to serve
Instructions:
  • Preheat the oven to 200C/180C fan forced and lightly grease a 20 x 30cm shallow baking dish.
  • In a small food processor, blend tahini, lemon juice, garlic, and 125ml (1/2 cup) water until smooth. Spread the mixture over the base of the prepared dish, then layer salmon and broccolini on top. Finish by sprinkling with sumac.
  • Cook the salmon until it is perfectly cooked through and the broccolini is tender-crisp, for about 10 minutes.
  • Top the dish with the flavorful combination of onion and coriander. Accompany with fresh lemon wedges for a burst of citrus and bread for soaking up the delicious sauce.
