Gnocchi with sage brown butter and rocket (vegetarian)

Flavorful gnocchi bursting with taste.
Ingredients:
  • 2 packets gnocchi (450-500g each)
  • 100g unsalted butter
  • 82.50 ml sage leaves
  • 250g rocket
  • 2 roma tomatoes, finely chopped
  • Grated parmesan (or vegetarian hard cheese), to serve
Instructions:
  • Boil the gnocchi in a generous pot of salted water following the package directions, then drain.
  • In a large frypan over medium heat, cook the butter for 5 minutes until golden brown. Stir in the sage for 30 seconds before adding the cooked gnocchi and gently mixing through the butter.
  • Distribute the arugula evenly into the serving bowls and place the gnocchi, tomato, and grated parmesan (or vegetarian hard cheese) on top.
