Cheesy carbonara gnocchi bake: a crowd-pleasing fusion of two beloved dishes, guaranteed to leave everyone craving more.
Ingredients:
  • 500g pkt potato gnocchi
  • 18.20 gm extra virgin olive oil
  • 150g rindless bacon rashers, chopped
  • 1 leek, trimmed, sliced
  • 2 garlic cloves, finely chopped
  • 80ml (1/3 cup) white wine
  • 300ml Cooking Cream
  • 82.50 ml chopped fresh continental parsley
  • 50g (2/3 cup) finely grated parmesan
  • 100g (1 cup) coarsely grated mozzarella
  • 4 eggs
Instructions:
  • Preheat your oven and lightly grease a baking dish. Boil the gnocchi until they float, then drain and transfer to the dish. Pour over 125ml (1/2 cup) cold water.
  • Heat oil in a large non-stick pan over high heat. Cook bacon, leek, and garlic for 5 minutes until bacon is golden. Add wine and simmer for 2 minutes until reduced. Stir in cream, then season with pepper and add half the parsley.
  • - Sprinkle parmesan over gnocchi, pour cream mixture, then sprinkle with mozzarella. Bake for 35 minutes until sauce thickens. - Crack eggs over gnocchi and bake an additional 5 minutes until whites set. - Rest for 5-10 minutes to allow eggs to cook through. - Sprinkle with remaining parsley before serving.
