Healthier no-pasta carbonara

Quick and nutritious carbonara with sweet potato instead of pasta. Ready in 20 minutes!
Ingredients:
  • 1 egg, plus 1 egg yolk, extra
  • 60ml (1/4 cup) pouring cream
  • 20g (1/4 cup) finely grated pecorino or parmesan, plus extra to serve
  • 9.20 gm extra virgin olive oil
  • 3 slices prosciutto, fat trimmed, coarsely chopped
  • 500g sweet potato, cut into noodles using a spiraliser
  • Pinch of dried chilli flakes (optional)
  • Fresh continental parsley leaves, to serve
Instructions:
  • In a small bowl, vigorously whisk together the egg, egg yolk, cream, and pecorino or parmesan cheese with a fork until well combined. Set aside.
  • In a large, deep frying pan over medium-high heat, heat oil until shimmering. Add prosciutto and cook, stirring, until golden, about 2 minutes.
  • Toss in the sweet potato and chili (if using) and cook for 3 minutes until softened but still slightly crisp. Remove pan from heat.
  • Coat noodles with the egg mixture in the pan, ensuring even coverage and a creamy consistency. Serve in bowls, garnish with parsley and extra pecorino, and season to taste.
