Wholesome no-bake cookies with oatmeal and coconut for guilt-free indulgence.
Ingredients:
  • 1.25 cups white sugar
  • 0.5 cup low-fat (1%) milk
  • 0.5 cup butter
  • 4 tablespoons unsweetened cocoa powder
  • 0.5 cup crunchy peanut butter
  • 3 cups quick-cooking oats
  • 0.5 cup unsweetened coconut
  • 1 teaspoon vanilla extract
Instructions:
  • In a saucepan, mingle the sugar, milk, butter, and cocoa together and bring to a gentle boil until the sugar dissolves, which should take around 1 1/2 minutes. Take the pan off the heat and fold in the peanut butter, oats, coconut, and vanilla extract. Shape the dough into walnut-sized balls and set them on waxed paper to cool and harden.
