Vegetable-packed carbonara for a guilt-free pasta treat!
Ingredients:
  • 250g dried spaghetti
  • 18.20 gm extra virgin olive oil
  • 150g shortcut bacon, trimmed, chopped
  • 2 bunches broccolini, trimmed, cut into 4cm
  • 1 bunch asparagus, trimmed, halved
  • 250g packet fresh sweet potato noodles
  • 250g packet zucchini noodles
  • 250.00 ml frozen baby peas
  • 3 eggs
  • 187.50 ml grated parmesan, plus extra to serve
  • 189.38 gm thickened cream
Instructions:
  • Prepare spaghetti according to package directions. Drain the pasta, saving 1/4 cup of the cooking water.
  • Heat oil in a large saucepan until sizzling. Sauté bacon for 2 minutes until lightly browned. Toss in broccolini and asparagus and cook for 3 minutes until tender. Add sweet potato noodles, zucchini noodles, and peas. Cook for 2-3 minutes until almost done.
  • Combine eggs, flour, parmesan, and cream in a bowl, whisk until smooth. Mix pasta with egg mixture into the bacon mixture. Cook over low heat, stirring constantly for 2 minutes until sauce thickens. If needed, add reserved cooking water. Serve sprinkled with extra parmesan on top.
