"Quick and tasty veggie sliders ready in just 17 minutes."
Ingredients:
  • 1 brown onion, halved, thinly sliced
  • 1 carrot, peeled, cut into matchsticks
  • 1 large zucchini, cut into matchsticks
  • 1 small sweet potato, peeled, cut into matchsticks
  • 7.50 gm Mexican spice mix
  • 1/4 -1/2 tsp dried chilli flakes, to taste
  • 21.00 gm fresh lime juice
  • Iceberg lettuce leaves, to serve
  • 8 small slider buns, halved
  • 40g (1/2 cup) grated cheddar
  • 2 green shallots, thinly sliced lengthways
  • Sliced pickled cucumbers, to serve
  • Aioli or sour cream, to serve
  • Lime halves, to serve
Instructions:
  • In a large frying pan over medium heat, heat the oil until shimmering. Cook the onion for 2-3 minutes until just softened. Add the carrot, zucchini, and sweet potato and cook for another 2-3 minutes until just softened. Mix in the spice blend and chili, stirring for 1 minute until fragrant. Finish by stirring in the lime juice before removing the pan from the heat.
  • Evenly distribute lettuce on bun bases. Add the vegetable mixture, cheese, and shallot on top. Serve with pickled cucumber, aioli or sour cream, and lime halves.
