Elevate your veggies with this amazing recipe!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 tsp ground coriander
  • 1 garlic clove, crushed
  • 1/2 small cauliflower, cut into florets
  • 1 carrot, diced
  • 200g green beans, trimmed, halved
  • 1 zucchini, sliced
  • 2 x 240g packets Seeds of ChangeⓇ Brown Rice & Quinoa
  • 56.10 gm sultanas, plus extra to serve
  • 62.50 ml natural sliced almonds, toasted, plus extra to serve
  • 60g baby spinach
  • 250.00 ml plain Greek-style yoghurt
  • 62.50 ml fresh mint leaves
Instructions:
  • In a large deep heavy-based frying pan over medium-low heat, heat oil. Add onion and cook for 5 minutes or until softened. Stir in cumin, coriander, and garlic, cooking for 1 minute until fragrant.
  • Combine cauliflower and carrot in the pot. Cover and cook for 5 minutes, stirring occasionally. Add beans and zucchini. Cover and cook for another 5 minutes or until vegetables are just starting to soften.
  • Combine the rice and quinoa mix, sultanas, almonds, and 1/4 cup water in a pan. Heat for 1 to 2 minutes until warmed. Mix in the spinach and season with salt and pepper. Finish with a dollop of yogurt, fresh mint, extra sultanas, and almonds. Serve and enjoy!
