Protein-packed vegetarian salad perfect for quick weekday meals. Full of fresh veggies for a healthy, satisfying dish.
Ingredients:
  • 4 eggs
  • 1 large carrot, peeled, cut into long thin strips (see note)
  • 1 large beetroot, peeled, cut into thin strips (see note)
  • 6 Brussels sprouts, thinly sliced
  • 1 small fennel bulb, trimmed, thinly sliced
  • 1/4 small head broccoli, thinly sliced lengthways (see note)
  • 40.00 ml finely chopped fresh chives
  • 42.00 gm fresh orange juice
  • 36.40 gm extra virgin olive oil
  • 21.00 gm fresh lemon juice
  • 1 garlic clove, smashed
  • 2 tsp poppy seeds
Instructions:
  • To make the dressing, simply mix all the ingredients in a jar with a tight lid. Season with your favorite flavors, seal the jar, and shake vigorously to blend everything together. Keep the dressing aside for later use.
  • In a small saucepan, gently place the eggs and cover them with boiling water. Allow them to come to a gentle boil, stirring occasionally. Let them cook for 3 minutes. Drain the water and run the eggs under cold water, then peel and slice them in half.
  • In a large bowl, mix together the carrot, beetroot, Brussels sprouts, fennel, and broccoli. Drizzle with the dressing, toss well to coat. Serve in individual bowls, top with egg, and sprinkle with chives.
