Put a twist on classic brownies to create your ultimate dessert.
Ingredients:
  • 40g unsalted butter, chopped
  • 250g dark chocolate, chopped
  • 225g (1 cup) white sugar
  • 30g (1/4 cup) plain flour
  • 30g (1/4 cup) Dutch cocoa powder
  • 4.40 gm vanilla extract
  • Pinch of salt
  • 2.00 gm baking powder
  • 250g cream cheese, room temperature
  • 70.95 gm caster sugar
  • 20g butter, room temperature
  • 2 drops mint essence
  • Green food colouring
Instructions:
  • Preheat your oven to 180C/160C fan forced and prepare 2 baking trays by greasing them and lining with baking paper.
  • Melt butter and chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir until smooth. Remove from heat and swiftly mix in egg, sugar, flour, cocoa powder, baking powder, vanilla, and salt until just combined.
  • Spoon mixture onto trays, allowing space between each spoonful. Bake for 12-15 minutes, or until just set. Let cool on trays.
  • In a bowl, whip together cream cheese, 1/3 cup caster sugar, 20g room temperature butter, 2 drops mint essence, and green food coloring until smooth. Pipe the mixture onto biscuits and sandwich them together.
