Elevate your brownies with a simple recipe featuring crispy peanut brittle topping!
Ingredients:
  • 150g butter, chopped
  • 180g dark chocolate, chopped
  • 215.00 gm caster sugar
  • 59.40 gm brown sugar
  • 84.98 gm milk
  • 3 eggs, lightly beaten
  • 32.50 gm cocoa powder
  • 375.00 ml plain flour
  • 180g block peanut brittle milk chocolate, chopped
  • 65.00 gm smooth peanut butter
  • 250g packet chocolate cream biscuits
  • Extra 100g dark chocolate, melted
  • 160g packet peanut brittle balls, roughly chopped
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line it with baking paper, extending the paper 2cm above the edges of the pan on all sides.
  • In a saucepan over medium heat, combine butter, dark chocolate, sugars, and milk. Cook and stir for 5 minutes until mixture is melted and smooth. Let cool for 10 minutes before proceeding.
  • Incorporate eggs into chocolate mixture and whisk thoroughly. Add in cocoa and flour and whisk until combined. Gently mix in peanut brittle chocolate. Transfer batter into prepared pan. Drop spoonfuls of peanut butter on top. Place biscuits neatly over the brownie batter.
  • Bake for 40 minutes or until the top is gently firm. Allow to cool in the pan before drizzling with extra dark chocolate and sprinkling with peanut brittle balls. Let it set for 1 hour, then cut into pieces and serve.
