Elevate your greens with zesty sauce and crunchy peanuts in just 20 minutes for a delicious twist on a classic side dish.
Ingredients:
  • 1 bunch gai lan (Chinese broccoli), trimmed, leaves and stems separated (see note)
  • 1 bunch baby choy sum, trimmed, leaves and stems separated (see note)
  • 18.20 gm peanut oil
  • 1 tsp sesame oil
  • 6 eschalots, thinly sliced
  • 20.00 ml kecap manis
  • 21.00 gm lime juice
  • 250.00 ml bean sprouts, trimmed
  • 1 long red chilli, thinly sliced
  • 40.00 ml roughly chopped roasted peanuts
  • Sesame oil, to serve
Instructions:
  • Position a large steamer over a wok or large saucepan of simmering water. Steam the gai lan and choy sum stems for 2 minutes, covered. Then add the leaves and steam for another 2 to 3 minutes until just tender. Serve in a dish.
  • Heat a combination of oils in a frying pan over high heat. Add eschalot and cook, stirring, for 2 to 3 minutes until golden and crisp. Drain on a paper towel.
  • In a small bowl, mix together kecap manis and lime juice. Arrange greens on a platter, top with bean sprouts, eschalot, chilli, and peanuts. Drizzle with the kecap manis mixture and a splash of sesame oil. Serve and enjoy!
