Indulge in this decadent peanut butter cake loaded with honey-roasted peanuts and drizzled with irresistible peanut butter chocolate glaze.
Ingredients:
  • 1 cup coarsely chopped honey-roasted peanuts
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/4 cups sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup creamy peanut butter
  • 3 eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup semisweet chocolate chips (3 oz)
  • 2 tablespoons butter
  • 2 tablespoons light corn syrup
  • 1 to 2 teaspoons hot water
  • 3 tablespoons creamy peanut butter
Instructions:
  • Preheat your oven to 325°F. Prepare a 12-cup fluted tube cake pan by greasing it with shortening and lightly flouring it. Evenly distribute nuts on the bottom of the pan. In a medium bowl, combine flour, sugar, baking powder, and salt; set aside. In a large bowl, use an electric mixer on medium speed to cream together 1/2 cup of butter and 3/4 cup of peanut butter until smooth, remembering to scrape the bowl occasionally. Add eggs and mix well. Gradually beat in milk and vanilla on low speed. Slowly incorporate the flour mixture into the wet ingredients until just combined, remembering to scrape the bowl occasionally. Spread the batter in the prepared pan.
  • Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan onto a cooling rack. Allow it to cool completely for about 2 hours.
  • In a 1-quart saucepan, gently melt chocolate chips, 2 tablespoons of butter, and corn syrup over low heat, stirring often until smooth. Let it cool for about 10 minutes. Gradually stir in hot water, 1 teaspoon at a time, until the glaze is glossy and thick. Drizzle over cake, letting it cascade down the sides gracefully.
  • Microwave 3 tablespoons of peanut butter in a small microwavable bowl on High for 20 seconds, or until smooth and drizzling consistency. Drizzle over the chocolate glaze.
