Ice Cream Pie

Crunchy Rice Krispies® crust topped with creamy ice cream, peanut butter, and rich chocolate fudge sauce.
Ingredients:
  • 3 tablespoons butter
  • 3 tablespoons corn syrup
  • 2.5 cups crispy rice cereal (such as Rice Krispies®)
  • 0.25 cup peanut butter, slightly melted
  • 1 (12 ounce) jar chocolate fudge sauce, divided
  • 1 teaspoon corn syrup, or to taste
  • 2 quarts vanilla ice cream
Instructions:
  • Combine butter, 3 tablespoons of corn syrup, and brown sugar in a saucepan. Bring to a boil, then remove from heat and mix in rice cereal. Transfer mixture to a 9-inch pie pan and press down firmly. Freeze for 15 to 20 minutes until firm.
  • Combine creamy peanut butter, 1/4 cup of decadent fudge sauce, and a touch of corn syrup in a bowl. Gently spread half of this luscious mixture onto the crust. Chill in the freezer until firm, about 10 to 15 minutes.
  • Transfer the remaining half of the peanut butter mixture into the fudge sauce jar, stirring well. Chill the peanut butter fudge sauce until firm, for about 10 to 15 minutes.
  • Evenly scoop and press ice cream into crust; chill until solid, around 10 to 15 minutes.
  • Transfer the peanut butter chocolate sauce into a microwave-safe bowl and heat until warm, for about 30 seconds to 1 minute. Serve with the pie.
